I think, the extras of the DVD mentioned it... At that time, men and women (when not married to each other or family) did not have any physical contact in daily life except when dancing. Basically, you don't see them giving or holding hands at all, plus they're often wearing gloves. So when he helps her, they're skin to skin which obviously confuses both, hence her look and his hand move when he becomes aware of what just happened.
