I was fortunate enough to be in Brussels March 7th for one of two public brew days Cantillon hosts a year; one near the beginning of their brewing season in the Fall and one near the end in Spring. Jean Van Roy the younger was manning the Vernesque controls whilst the charismatic Jean-Pierre the elder was playing at host and we were lead on a tour by a longtime volunteer. With Gueuze flowing at 7AM, who needs OJ?
The Van Roy's were kind enough to send me home with the ultimate beer pilgrimage relic, a long used oak stave from one of their barrels. The stave is currently in my basement, hopefully spawning Pajottenland microflora in my own barrels.
