Curry Yogurt Chicken
- 8 chicken thighs, skin removed, salt and peppered
- 1 cup greek yogurt
- 1 1/2 tablespoon curry powder
- 1 tablespoon fresh minced ginger
- 1 tablespoon minced garlic
- 1/2 tablespoon minced jalapeno
- handful fresh cilantro, chopped
Directions:
- Salt and pepper the chicken thighs.
- In a bowl, stir yogurt, curry, ginger, garlic, and jalapeno together.
- Massage the chicken with the yogurt mixture and marinate for a couple of hours.
- Roast the marinated chicken in the over on 400 covered for 1/2 hour. Uncover and roast for another hour or until chicken is cooked and juices run clear.
Remove and top with freshly chopped cilantro.
- Serve with lentils and rice or naan.

Just made it! Delicious! I think this is the first time i ever made chicken in the oven without it being one of those box dinners lol. My chicken in the oven took about an hour or a little more @ 350. 2 thumbs up! i didnt do make the lentiles. i used red curry, and no ginger - still tasted good. Thanks! :)
