    You don't have to put guanciale or pancetta or bacon inside "aglio olio e peperoncino"

    and the reason is the name "aglio olio e peperoncino" it means "garlic oil and chili"

    Bacon (or guanciale or pancetta) pasta are "carbonara", "amatriciana" e "gricia"

    I'm from Rome, in Lazio, when all of these recipies bornd.

    My comment doesn't say that it's not good or the original is better, or italian way is better, just to tell you the right version.

    I should point out though that "aglio olio e peperoncino" means garlic, oil and chili pepper, thus adding meat (bacon or pancetta or guanciale) is not necessary!
