We finally hit the REAL Tsukiji Fish Market and it was well worth the trip. It is a loud and hectic place, carts and forklifts zip by every second, and the floor is as slippery as...well...a fish.
Here, the experts gut and slice a very large tuna (well worth watching, Art!!!)

kudos to the japanese for the repect they give to the fish. i fish off southern california and our deckies waste way too much when they filet, imho
