I tried folding exactly like you showed when I was making a pineapple torte tonight but it still came out flat. I even had to fold for two parts, once for the cake with egg whites and later for the filling, which was whipped cream. Any ideas of what I could be doing wrong?

Do you use the same technique for folding egg whites into wet ingredients? (i.e., a cheese mixture for a cheesecake. :))
