Carb counting used to be known as carbohydrate exchange counting and is a method many people with diabetes use which involves counting the grams of carbohydrate you eat.
Carb counting isn't exclusively for people with diabetes. There are some basic carb counting rules such as ensuring that if something says it has 'no sugar' doesn't mean it doesn't have any carbohydrates. Bread is extremely glycaemic and the different between brown bread and other breads is negligible. Bread is bread is bread. I don't know where she got her ideas about bread, but it's probably an old book.
