Smoking some ribs on my Big Green Egg with apple and hickory wood over Lazzari mesquite. The digital thing is a BBQ Guru DigiQ II that controls the air into the bottom with a temp sensor all hooked into the controller. If it goes above where I set it it shuts off the fan. If it gets too cold it cycles it on.
@SpaceLordMother9000 Yea it got really crusty inside on the top and I was told to run the fire really hot for a long time, that burns it off. But then you need a new gasket for the top and bottom.

Yea I did after this. I ran it really hot to clean it and that wasted the rest of the old gasket. I used the newer nomex one, and it works much better now.

Rick, Just to let you know....... It appeas as though you need to replace the gasket kit on your unit, or tighten down the bolts that hold your baands in place or both. You have extreme loss of heat/smoke through the lid and base at the gasket/band area. I'm a professional BGE Chef, and can guarantee you'll improve your performance if you follow the advice. Good Luck! The G Man
