It looks like he is blocking with the elbow and forearm before he captures the leg. I have seen people who meet the kick ribs first then captures, w/o taking a sidestep....and somehow the guy charges people $150 a month
Lester you are correct in stating that you should let the kick touch you first, but there should be a slight sideways shift as the kick touches to take the power out of the kick. As most of the time the kick will be to the midsection. Whilst shifting to the side you hook the arm over. Standing still or meeting the kick at the midsection is likely to cause you damage. Great video though. ;-))

Yeah I would never try and meet the kick ribs-first, it is best to take some of the bite off if you can...
