    I am an experienced gnocchi maker--& learned from my Florentine grandmother. I would say that your dough looks too thick & dry--which will give you less tender gnocchi. The whole trick with gnocchi is to make them so they just barely hold together. When I add my flour to the potato & egg & shape them, I always do a test batch of about 6 pieces--& I boil them before I shape my whole batch. If they don't fall apart in the cooking--they have just enough flour. More than that--they will be tough.
