Trimming the silver skin,dry the meat before searing,how to know when the skillet is hot,2 teaspoons of vegetable oil(Canola oil has a higher smoking temp),sear meat on all sides,then place meat on a cooking tray and put it into a 400 degree oven on the middle rack until the meat is 135 degrees,
The sauce is optional and so you write it down if you want it. I just make mashed potatoes with the Tenderloin. lol
Let the Tenderloin rest,tented,for 10 minutes.
serve this with a mango chutney and curry butter in lieu of the sauce in the video = heaven

Oh god . . . they cut off the fat?! That's the best part, it's where all the flavor is! I did however leave mine on, and the recipe was just as delicious! Thank you for posting!
