He's basically saying in code to Watson "which one do you want to take, the two small ones or the big one?". And of course, he decides to take on the two small ones.
Imagine a roast dinner. The meat is like the main part of the meal (the Dredger) and the potatoes are like the side dish (the Arsonists).

...Well being french myself, I can see the effort put in the text... but Robert's french is pretty poor xD (...Don't misjudge what I said. I'm probably one of RDJ's biggest fan. I love him SO MUCH !! but I don't know who told him how to say that texte but it's weirdly said and his pauses are weirdly placed in the text.) Just a so AWESOME scene from Sherlock Holmes... I'll just watch it again... and again. Oh and once more :D
