    by the way' i made my tostones' and yum yum yum.. question. when the plantain is not quite ripe, yes maybe wait' but i already cut into it... is best to make the tostones' rather then mundes'...:( im spelling that very wrong' but sweet ,,once fried plantains. or am i just silly and should know when a plantain is rip or not. :(

    I dont' think there is a definitive answer to your question. I prefer my tostones to be done with very green plantains. Otherwise, just wait until they ripen and make "maduros." Which are sweet and lovely.

    when my mom used to make tostones when I was growing up she did the "crushing" with a brown bag, an no as an adult thats still the way I make tostones. By using a brown paper bag it also gets rid of a lot of the oil.
