想食溏心蛋又變 咗 全熟蛋,點搞?其實烚蛋步驟好講究,蛋先置室溫回暖,放鍋中後才加冷水約高過蛋 2cm 。鍋中加 1 茶匙鹽或醋,以防爆蛋殼。開大火,剛開始時要用筷子轉動雞蛋一會兒,以防蛋黃側向一邊,水滾後 冚 蓋轉小火才開始計時, 4 分鐘便可做出美味的溏心蛋。
