Great idea. I harvested a bunch of basil today and was looking for a way to preserve it without drying. I had citric acid on-hand and I've already processed and frozen the basil. It was quick and easy and I can't wait to taste it this winter! I've been enjoying your other videos and have subscribed. The cheese-waxing looks really interesting.

For salsas and seasoning meats and fish I put the cilantro in the blender with lemon or limejuice, 1/2 a diced onion, 4 cloves garlic and 1/2 diced green pepper, 1Tbsp evoo, salt pepper to taste and I placed 1/4 cup in a sand baggie tie it off and place in a gallon ziploc and label it sofrito. AMAZING tastes great in rice as well or beans.

@vida130 Great, time saving idea. Store bought marinades are expensive and loaded with stabalizers and additives. I like your fresh idea.
