A healthy and delicious recipe featuring pan seared salmon with a crispy skin, a spicy mango sauce and a side of green beans. Try this out sometime, you will love it.
Ingredients for 2 servings:
1 lb salmon fillet with skin on
1 ripe mango
1/2 lb green beans
1 lime
1/4 cup finely minced mint leaves
1 diced shallot
1 diced jalapeno pepper with seeds removed
Vietnamese chili garlic sauce
Rice vinegar
Extra virgin olive oil
White sugar
Fish sauce
Start by preparing your salmon:
Cut fillet in half to make 2 portions
Score skin on salmon pieces with a sharp knife
Brush salmon pieces on all sides with olive oil
Season all sides of salmon with salt and ground black peppercorn
Set aside, begin preparing mango sauce
Peel and cut slices from mango, discard core and roughly dice up mango slices
In a blender or food processor add:
Diced up mango
Diced up shallot
Juice of 1 lime
1 tbsp rice vinegar
1 tsp sugar
1 tbsp Vietnamese chili garlic sauce
Puree all ingredients
Pour sauce from blender into a bowl and whisk in 1 or 2 tbsp of water if you prefer a thinner sauce
Add to sauce minced mint leaves and diced jalapeno pepper, mix well and set aside.
Next, prepare your side of green beans:
Bring 1 pot of water to a rolling boil
Remove ends off green beans and cut in half
Add green beans to boiling water and cook for 2 minutes
Strain and add to a bowl and add:
1 tsp rice vinegar
1 tbsp olive oil
1 tsp fish sauce
Ground black peppercorn to taste
Toss, set aside and start cooking your fish
In a hot nonstick pan add 2 or 3 tbsp olive oil
When oil starts to smoke, add salmon pieces to pan skin side down and sear for 4 minutes.
Flip salmon pieces over and cook for another 3 minutes
Plate your dishes up by placing a portion of green beans in the center of the plate. Place your salmon on top of the green beans skin side up and spoon mango sauce over fish.

Nice man, the mango sauce looks great. Do you ever bake your fish as appose to frying it on a skillet?
