We are smoking a St. Louis trimmed slab of spare ribs using the 3-2-1 Method. This involves three steps that we outline in the video. I'm using Wolfe's bold rub (http://tinyurl.com/yde6zhe) and my Lime BBQ sauce. It's Kansas City Style and available at http://barbequesaucerecipe.net/ .

  • The smoker will work just fine for the second and third steps. The reason I used my oven is that we had the house open, enjoying a mid-60's spring day. Today the AC is on and we would use the smoker too.

  • Great method for Spares and St Louis style ribs.But if your smoking baby backs go 2-2-1.

  • Whenever I have tried my hand at smoking ribs in the past the result has been a meal that even a starving dog would politely decline to eat. I will definitely give your 3-2-1 method a serious try next weekend with only one small change in the method, I think I will use my smoker for the entire cooking time rather than using the oven on the last two steps. Thank you very much for the information and I will post again after I have given this a try.
