烹制方法:1、将猪腿肉先用白酒刷一遍,灭菌消毒,将盐放入炒锅中,加花椒、八角小火炒至微黄后均匀的抹在肉上,放入容器中密封两天,再放置通风处5天;2、锅中倒入少许­大米,再铺一层橘子皮,将风干好的腊肉放在上面,盖上两张白纸,大火熏烧30分钟,中间可将有水的白纸取出,再加盖继续熏烧即可;另一种不用熏的做法:将风干好的肉用白酒­刷一遍,醪糟与甜面酱混合后刷在肉上,每天刷一次,连续三天,再挂7天即可。
