It is an extremely old myth that your spirit leaves your body when you sneeze, because your heart skips. It was initially said to save a person's soul, and that is why the person says thank you. Most people who say "bless you" or "God bless you" don't even know that that's how it started or that that's why they're saying it, but it has just become a common practice by idiots who don't know any better.
