Here is my take on the Gaucho Beef Ribs. I couldn't build a fire pit in my back yard so I decided to use my smoker with the setup I use to smoke bacon. It turned out really well, and was a lot of fun. Thanks to Joe at TangoSpice.com for the Midnight Espresso rub, it's great on beef ribs, can't wait to try it on brisket.

  • Very nice, where you buy the hanger????

    The guy, Steve, only he do it with salt ( coarse or kosher) and pepper, I recomend to you next time do it like that, for more meat flavor, if you want at the end, at the side of the plate add a sauce like chimichurry, also at the time you are cooking , if you want, can spray the meat with a brine, ( water, salt, the herbs you like,leave overnite) every time you turn it , or every 15 30 minutes, at least cook for 2 hs

    I am really interested in the set up you used for these ribs. I have never seen a bacon hanger before.

    After seeing the Primal Grill with Steven Raichlen video you highlighted I have been wanting to try this method.

  • @TangoSpiceCompany No problem, I really like this rub. A welding buddy of mine has been working with me on the rack setup. I'm working on an accessory right now that's basically a vertical rotisserie that hangs from the rack. You have to rotate it manually but that's not a big deal. We actually sell the rack, it's made from surgical grade stainless steel so it won't rust. BTW you can get the bacon hangers on amazon.com for $5.10 + $7.50 shipping

  • Killer job! Looks like a fun way to cook.

  • I leave the ribs exposed to the heat, at the time the ribs start to falls off the bone, I turn it, and leave it until is have some crust. Also you can seal the meat side first.
