Very Different from the way I was taught.
You left all the sinew [silverskin] on,and the abdominal flap.
The ribs I bag in muslin and cook it all together, in chicken stock, for about 3 slow hours. To each his own.

I like the belly flap. It gets very tender when I bake the rabbit. We usually marinate the rabbit with lemon olive oil and rosemary. Check out the recipe on our website ventimigliafoods . com
