  • The amount of information on the internet is quite abundant and sometimes overwhelming. My other question is, since you already use a foil pan with the meat, would the water pan below filled with beer really be necessary? I'm thinking of using a beer-based basting sauce that I will probably just invent.

  • @spivedog77 Now that I think about it - not really necessary however it would add some flavor to the meat...

  • I noticed you had a "flat" cut piece of meat and you put it in a foil pan. Although some so called die hard brisket makers might disagree, I think that would be a great idea for keeping the brisket's juices.

    I guess my question is would you then make some kind of a sauce to serve on the side, aka BBQ sauce out of the brisket's juices? I am from Ohio, but I lived in Texas for awhile, and I am going to attempting my first ever smoked brisket.

  • @spivedog77 I'm from Ohio too (OSU grad) - I'm sure you could make a nice BBQ sauce with the juices...

  • This is indirect cooking. He does smoke it some. but it's not 100% smoking. If it was all smoking. you would use a smoker with a separate firebox. But that is all you can do on a Weber as for smoking. It just doesn't have enough room .

  • You've got that right - have a true blue smoker now though so another video is coming soon!

  • Cool video, thanks for the laugh at the end with the icecream lock. When you said or you can just cut the son of a bitch in half, I could not help but you laugh my head off. You said that with such a straigh face and I could actually see my 18 year old daughter or my wife doing this and then tossing the lock in the trash can, but what the hell, I bought one anyway!!! We will see what happens.
