i think you're right about the olive oil turning bitter! i tried making hummus years ago and it tasted bitter and awful. I will definitely try this recipe and your advice!!!

In the middle east, we put tahin (tahini) and we sometimes use basil olive oil instead of ACTUALLY putting basil in it.
