you can use melted butter, but it seems to me there is something missing from the recipe, my mother's poppy seed cake had a very moist, delicious filling, so I think it was made differently, this looks like it may turn out a bit dry, and when she made the walnut, she always spread a bit of apricot jam on the dough first, wish she had written down her recipes, (or wish I had) she was the most amazing cook, she made the best cottage cheese strudel

Do you have to use duck fat? or can you just use butter?

duck fat is common in hungAry. we basically use pig, duck and goose fat for different kinds of food.
