@BakerAero interesting, thanks for the info! Phil tried growing some mushrooms last year from a starter - it was very cool, but not sure it was worth it. Do you grow mushrooms? I'd be interested to know more about it.

nice recipe but the mushrooms do not reabsorb the water... it just evaporates. If you ever get into mushroom growing you'll realize pretty quick just how thirsty they are during growth.

I don't really care for mushrooms. Is there anything else you recommend substituting it with?

@CamumoneyzWifey hmmm... good question... the mushrooms are kind of central to the gravy, but you could try it with just onions - get them almost caramelized, then add balsamic or red wine and some veg broth if you have some, and the thickener (arrowroot or otherwise). the key is just to get a really rich flavored liquid and then thicken it into gravy, so you can experiment with whatever you like - have fun with it! :)

@chloeyrose Yeah, definitely - those add a lot of flavor! I also sometimes use rice milk, and add a bit of coconut oil... makes them more like buttery mashed potatoes! Enjoy!
