Chef John - looks like a great recipe. I would like to try making it for the holidays.. but looks like peaches are not in season. So what do you think about can or frozen peaches? Recommend or not recommend?

hey i'v heard that you get the best beef in japan hope to make this stuff with japanese beef someday.imagine same recipe but wid better taste.
btw their beef is called wagyu.
