You first tune the 7 major strings (Indian music uses movable, not fixed DO), then the sympathetic strings according to fret.
Then you hope to God the temperature doesn't change drastically, cuz then all the sympathetic ones either stretch or contract, and all your hard work goes down the drain.

A master can tune while playing at the same time.
