It is NOT super cooling. Super cooling turns it into a block of ice. In this case it is not, it is turned into 'slush', a mixture of ice and water. High pressure lowers the freezing point of water since the water is more dense than ice. The coke is pressurized so the freezing point becomes lower than 0C, than the machine keeps the temperature at 0C. Once you open the bottle (releases the pressure) the freezing point goes back to 0C and some of it freezes.
