You can't, blame it on Samsung (they are not expert in all areas... :-) It means you cannot listen to - say - 5 hours of music, because the battery will dry. Some says you can then change battery (you get 2 in the package) but it is a pain in the ass...

Who can tell me this: Can you have the phone plugged into mains power and have the earphones in at the same time? It looks to me like they go into the same socket?

It is easy to type. And T9 dictionary is surprisingly helpful, as it remembers words that you typed (and originally not in the vocab).

Maybe Samsung wants create some unique stuff (as they are expert in display technology, it won't be hard). And it is an advantage that its OS will be WM6 for Pocket Phone. WM6 sucks anyway but WM6 for Smartphones is worse.
