    Perhaps about 500Kg flour, 100 Kg butter, 100 g sugar, 35 cl milk, 30 g leavening, 4 eggs. Don't put all flour in the begining, reserve some. Try to get the texture that Mr Bertinet show us. Bakery for no-proffesionals is a question of try and try...

    This is one of the best videos that show how the Bertinet method of kneading is started. The step they don't show you is when the dough has finally formed, you need to then begin doing quarter turns with each fold/stretch.
