A holiday favorite! Comments, questions, suggestions, ideas for a title for this segment, LET ME KNOW!

The recipe:

Ingredients:
1 loaf white or wheat bread
1 cup soy milk
7 oz silken tofu
1/2 cup unsweetened apple butter
cinnamon
*note: a cup of raisins can be added to the recipe and it is traditional to add three almonds of Epithany (the Day of the Three Kings).

Equipment needed:
5x9x3 cooking pan
Blender
Oven heated to 375 F

Procedure:
Leave bread to dry over night. Grease pan and tear filling to the rim of pan. Blend soy milk, tofu, and apple butter adding cinnamon to taste. Pour blend over pan soaking all bread. Cook for 30 minutes or until golden brown on top.

Serving suggestions:

  • Whats a substitute for apple butter? I can't get it here around theese parts.

    Vegan powah! :D

  • 100% pure maple syrup. Note: American bread pudding is much thicker than European bread pudding, so if it doesn't fit your needs add about a quarter cup of soya milk, use extra silken tofu, or switch to almond or hazelnut milk.

  • Thank you for the information. We don't have smuckers either in the UK, whatever they are. We have snickers. I have never made apple butter and it sounds very difficult. It gets mentioned a lot in macrobiotic cooking but they never include a recipe

  • Actually, I would not suggest using Smuckers brand it contains High Fructose Corn Syrup, I use A&J, it contains no added sweeteners and is the best tasting. I order it my local health food store. I also have found a sweet patato butter I use to sweeten my pumpkin pie, however that is much harder to find.

  • Dandelion45, thank you. It sounds delicious, and I've often seen it in books on macrobiotic cooking by Michio Kushi, but never with a recipe. We don't have any smuckers in the UK, so I will try to make some but if you know of a recipe, that would be great. Thanks again :)

  • Apple butter is a highly concentrated form of apple sauce, produced by long, slow cooking of apples with cider or water to a point where the sugar in the apples caramelizes, turning the apple butter a deep brown.

sorry not butter but smucker do have them

  • Please can you explain what apple butter is, and how it's made? We don't have it in England.

  • What the hell is apple butter?

  • this is so awesome, I'll try it :-P

  • I've never even tried bread pudding :D

    Thanks for advice.

I have to go to sleep now, it's 3 am here in Europe
