The guide rods need to be longer so the plane gains enough speed for the wings to stabilize it.

Too much thrust, try for a longer burn but a longer burn, if you can. Get it some lift before you burn it - a longer launcher. It's stalling as soon as it gets off the ground. I watched another one, and that's the case. Also, make sure your line of thrust is neutral. Thrust shouldn't cause any pitching at all in a winged aircraft.
