  • wrong! "slow and low" heat cooks the brisket, not smoke. otherwise it would be a cold-smoke process, like fatback or curl.

  • interesting concept, you say the heat doesnt cook the meat, but the smoke does? you gotta explain that one fella.......so why do things cook in a heated oven when there is no smoke?

  • True Rainofwalrus, and funny how people get BBQ and Grilling twisted, they think they grill it and slap some sauce on it, then its bbq WRONG! Also I understand some folks use water pans and some use fresh "Green" Oak or Hickory, If I could get ahold of some apple wood i would use 25% oak 25% Hickory and 50% apple, but thats for pork only, not to shure on brisket
