Hi there, I'm Vietnamese and would like to buy Shepherd's purse. Is there another name or nickname it goes by so I can go into a Chinese supermarket in my area? When rolling the dumpling skins, should the middle be thicker than the edges?

Try to keep the thickness consistent throughout the entire skin, but for baozi, the middle should be thicker than the edges.
