In this video, John Finger, Founder of Hog Island Oyster Co., shares some delicious oyster recipes. John shows us how to prepare his favorite oyster dishes and oyster sauce as well. He also demonstrates a quick and easy way to open oysters in simple steps.

John suggests storing oysters in a cold and damp environment. In a quick lesson in shucking oysters, John uses an oyster knife, a kitchen cloth and a flat surface. He inserts the oyster knife at the hinge point and applies pressure. Once he twists and hears a pop, John slides in an oyster knife against the top shell and slices it open. Easy to serve, John serves raw oysters in a Pottery Barn melamine serving bowl filled with ice.

John's favorite oyster recipe is the Hog Wash oyster sauce. John prepares the sauce using some necessary ingredients like rice vinegar and lime juice. He also adds chopped cilantro, jalapeno peppers and shallots. He mixes all these ingredients and serves the sauce in Pottery Barn glass bowls.

Another way of cooking oysters is to barbecue them. Applying some signature sauces, John simply puts them on the grill until the oyster meat starts bubbling. After 3-5 minutes, he takes them off the grill. John places the barbecued oysters on the Pottery Barn platter, filled up with rock salt. These oyster dishes will definitely please guests at all outdoor parties.
