1) This doesn't work with bag tea. It only works with loose tea.
2)There is no tannic acid in tea!!!!!!
3) There are natural tannins - this is the over-arching word for all of the phenols in tea - YOU WANT THESE! They are catechin, Epigallocatechin gallate, Gallocatechol, Theaflavin. These are the antioxidants that help destroy free radicals in the body.

Caffeine rises to the top so you can just pour off the top 1/3rd and save the rest. Don't pull the bag out or you will mix up the tea, just carefully poor off the top layer. The same can be done with coffee.

The industrial way is to soak the tea/coffee in liquid nitrogen, so that the cafeine solves into the nitrogen. The way you are using is a very good one and based on the same system of extraction. Good work!

ok after short amount of research i've learned that caffeine is more soluble in water the higher the temps.
"solubility of caffeine in water is 22 mg/ml at 25·C, 180 mg/ml at 80·C, and 670 mg/ml at 100·C."
but still seems like since a person would be using approx 250ml of water it would be more than enough to extract the caffeine regardless of temperature used.

i have a question.
how much of the good stuff gets wasted by the 30 second initial steep?
secondly. why steep it in boiling hot water to rid it of caffeine. why not just regular water since caffeine is highly water soluble regardless of the water temperature.
Does this really work? I drink regular tea quite a bit and my doctor has told me to calm down on the caffine a bit. Will this work with all kinds of tea. Also can I still put sugar and milk in it?

Okay but doesn't steeping that tea and throwing out the water from the first batch get rid of most of the antioxidants? If 90% of the caffeine get steeped out of the tea bag in the first 30 seconds...doesn't a lot of antioxidants get steeped out in the first 30 seconds too?

That is a very good question, and I would have to do some research to really get a good answer for you. It would depend on how long antioxidants dissolve and infuse into the tea, caffeine and antioxidants are both water soluble, but one may be more readily dissolved than the other. I would not think that you'd loose all them, some though yes. However there are many reasons for drinking tea besides getting antioxidants. Also it takes the water soluble tannins 5 min to steep from the tea leaves.
