@Shamrockrancher In addition to cookingland's reply, I personally don't feel It's traditional to use a small pan. I do agree theoretically that a larger pan can hold more, However, Smaller pans can be heated up faster then larger pans. Smaller pans are also easier to maneuver than larger pans.

Every Japanese cooking video i watch, they have the pan with the red dot in the middle. What are those pans called? and where can i purchase them?

@guitaristgirltc4fy I bought it in a supermarket. The red dot indicates if the pan is hot (if the dot is completely red, the pan is ready)

OK. I'll ask the dumb question... other than tradition, why would you use the little pan? It would seem easier to use a big pan or one of those griddles and knock it out all at once.

@Shamrockrancher Mmm ... the truth is that I have tried with a bigger frying pan, and it is not bad. But the truth is that I like to use a little one. In my opinion I think is easier to use a small saucepan.
