Jubei vs freesia was the name of the fight with the two girls in the forest. I think the anime is jubei chan but I'm not sure since I never watched it. The one with the guy swinging around the chain blade and cutting up rocks is Samurai Champloo which also happens to be my favorite anime. I wish you'd have shown the beheading of the chain guy on that fight as that was pretty much the highlight of the battle and it was done in a pretty clever way.
