FYI, when I say A7 shape, I should have said Am7 shape. So the first two chord fingerings are:
x04030 (Am7 shape slid up 2 frets)
x02000 (x02200 is the shape used by Paul)

My capo is on the 5th fret, but on the record the capo is at the 7th fret.

Great lesson, Goldhat, as always. The one thing that you didn't detail was the pinch walk-down from C to G that you say "everyone knows."

Sadly, I dont know this move and am having trouble figuring it out. Would you mind detailing it here ( I am sure I am not alone here--and Paul Simon uses this A LOT!)
