The game asks automatically the difficulty when you start a new game, so just click the option "Hard".

Complete the game (perfectly, if I remember right) on hard mode. Then start a new game and you should have that opinion.

I'm missing one on hard difficulty... where one piece was on super hard was the heart pedal... Near the top where you floated up in the bubble, that's where I missed it... thanks for these vids, their helping me find the few pieces holding me back in hard.
