【材料】:螃蟹2只、蛋1個、蔥1支、薑2片、麵粉3大匙、酒1小匙、鹽1/3小匙
【做法】:
1、先把花蟹剝開後,把螃蟹的腮和胃去除清洗乾淨即可。
2、接著把蟹切開後,把蟹缺口部份沾上少許的麵粉。 同樣地蟹殼也沾上少許麵粉放在一旁備用。
3、蔥切蔥末和蔥段、薑切成片備用。
4、起一油溫約170-180度的油鍋,把螃蟹沿著鍋邊放入炸,炸至螃蟹呈金黃色即可撈起瀝油。
5、起鍋熱油、把蔥段和薑片放入爆香,再把剛瀝好油的螃蟹放入接著加入米酒和少許鹽調味。
6、再倒入水但水不要淹過螃蟹,接著轉大火,蓋上鍋蓋。
7、把蛋液加入麵粉後,趁起鍋前再倒入蛋汁下去拌炒;最後再撒上蔥花即完成這道芙蓉炒蟹。
