We make these in Puerto Rico where I'm from too. I dip mine in heavily salted water after pressing them then fry them a second time. They come out salted and are ready to eat. Note they are easier to press when hot and are best eaten right away. This is a great country!

frying unripened plantain is such a shame. If you don't wait until the plantain is at least covered in black spots, when you fry them they won't taste as sweet.

We call them plantains in Trinidad and Tobago and let them ripen before we cook them either we fry them or boil them. So for those of you who don't do fry you can boil them but they should be ripe. They are bright yellow inside and go from green to yellow to black when very ripe on the outside.

you should put them in a seasoned water before you fry it the secong time and that dip gptta go!!!take it from a west indian thats not the way to do it...
