Butternut Squash with Cranberry Relish

Ingredients:
Medium sized Butternut or Acorn squash--cut in half
Orange juice (optional)
Kosher or Sea salt

Deli cranberry relish
Pecan or walnut halfs
Gorgonzola (or other blue cheese/optional)

Maple syrup or honey
Butter
Brown sugar

Cut squash in half and remove seeds.
Brush with orange juice
Sprinkle with salt
Bake cut side down on a foil-lined pan on middle rack at 400 degrees F. for about 30 mins., depending on size of squash. Squash should have some give when pressed. Turn and bake another 15 mins cut side up.

Meanwhile, toast the nuts in a small pan with a little of butter. Watch carefully so they don't burn. Only takes a minute or less. Crumble and put into a bowl. Add cranberry relish and some blue cheese. Stir together.

When squash are amost done, remove and fill the cavities with the relish mixture and bake another 15 mins. or until both sides are tender.

I don't claim to be a cook. I just do it to survive. The people below really know what they're doing.

  • @bowhunter2439 OK, you didn't "order", you just strongly suggested :-) I found one that that I liked had little nooks on the bristles but it was about 4 feet long. I'm still looking for a shorter one like that.
