Chef Jean-Pierre's garlic puree is a great flavor enhancer for any recipe requiring garlic. Use it as you would use minced raw garlic in pasta sauces, salsa, stews, stir fry etc. Be sure to refrigerate it, or freeze it, in a tightly sealed container.
i actually placed frozen garlic puree into my iced tea......HELL!!!

I've frozen garlic puree' before but never thought of using an icecube tray. That is a genius idea! perfect portions everytime you cook!.
I use twice as much garlic, so i problably fill the tray cubes!

If you've got a garden, you could grow your own garlic, and some kinds of fresh garlic will stay good for 10 months or longer at room temperature.
