I can also add, that calculating speed for an object demands that you know it's movement precisely, does it move straight and at a constant speed, are the reference points you set precisely where you think they are?
Regardless, if the object changes velocity and/or does not go along a straight line (if there really is such a thing) the only thing you have observed is an observed (not necessarily true) average speed.
You simply do not know for sure all the variables.

I can complicate it even further by introducing a sphere instead of a mere circle, as the radius to the guy in the mast may be the same as to the point where the knife hits the floor, but not all the way along the tracing of the knife's motion..

Also, one must consider if the landcrab rotates his head to follow the boat or faces the same direction when observing, like a camera left on a tripod.

In the event where the boat moves along the circle this will alter the experience also for the local observer - in reference to the non-local observer who, by being the center of the circle, affects the event.
One may, in the tangential motion, choose reference point (giving the radius) to be when knife is dropped, or when it hits the floor, and the observed motion will be distorted in different ways ;p

The ship thing, it is not simple.
The curve drawn by the falling knife will be distorted for the observer on the show no matter what.
Imagine the distance from that observer to the guy in the mast dropping the knife as a radius which draws a circle.
The boat will move tangential to this circle, and as you observe it will "rotate" away from you, you will see it's aft end more and more.
If it moves along the circle it will twist the curve too, as it is turning and the knife drops to the side.

Regarding different setup it has not limit BUT Science doesn’t work that way. Regarding the circular motion it is accelerated no Inertial and the Lorentz-Carezani rule doesn’t apply directly but could be calculated taking account the acceleration. Autodynamics is one Historical Step ahead and this is Scientifically Important,
