Sorry if I couldn't help you more. But train parts are quite difficult to obtain any other way unless you're an operator.

That depends entirely on the subway you're focusing on and the models of rolling stock the subway uses. This is of the TTC subway in Toronto. Lets take this and the Montreal Metro. Both are canadian, but the trains they operate are COMPLETELY different, e.g. TTC uses standard rails & steel wheels but Montreal uses Rubber Tyres.
Anyway, the best thing to do if you're looking for spare train parts is to look it up on ebay. Considering anything can be sold there spares shouldn't be hard to find.

i wonder what it would be like to stay on the train you would get off at the yard cause they always open the doors don't they?

Yea They open the doors But usually Drivers Are Supposed To Inspect All Train Cars Before Going to The Yard
