I've made this for the last two years at our party and it's fabulous! My husband is not a fan of mayo, so we end up adding more creole seasoning pretty much until he can't tell there's any mayo in it. We've also mixed in some crab meat before; very tasty. I highly recommend it.
For anyone new to this recipe (or not), don't be afraid to pull out the paintbrush and put some veins on your brain with red and blue food coloring! :)
