You don't. You should brew the tea once to open the flavor, then pour/clean all of the instruments with that tea, then brew the tea again and this time it is ready to drink. There was far too much cleaning in that ceremony.

If he's doing Gong Fu style, he's a bit rough cleaning teacups & when he turned up the sniffing cup. What I saw from tea masters are the calm & gentle way of tilting the sniffing cup a bit and slowly pour out tea into smaller cup. Then sniff the tall cup to appreciate the aroma & quality of tea. Then you drink from the smaller cup, slowly... you can slurp as this is to cool down a bit the hot tea. If you gulp , you don't taste anything...only burnt tongue LOL.

I would skip that 2x hot water into teapot - 1st hot water directly poured into teapot ( this to cleanse and open up/unfurl the dried leaves.) Then pour it out to rinse and warm the cups, throw it away, followed by 2rd pour hot water into teapot, let steep for few seconds, pour it out and drink. This will followed by 3rd, 4th pours so on, until leaves no longer drinkable/ fades it's taste.

I won't do the warming up of teacups that many times... Cleaning-it's definitely a must for hygiene purpose the tea cups, utensils, etc. besides removing dust particles and moulds. Once I saw a video which I bought from Tea Museum in Hong Kong, showed a dog passing by sun-dried tea leaves on cement platform...LOL.

This is very bad vidio. Because man, who make tea, don't know how better make it. He doing many mistakes. Perhaps he is beginner in chinese tea tradition...

it's a good ceremony. I haven't brewed pu-erh tea, so don't know if you need to rinse the tea twice, but certainly for tie-guang-yi one brew for rinse is quite enough, and the tea on the second brew smells/tastes great!

Chinese says; keep your water high but tea low, so this guy should learn this as well...huge mistake if u r not pouring your tea close to the chaha or cups...
