" Vinayaka Chaviti - Patri Puja is abode of traditional wisdom". Patri(leaves) puja to Lord Ganesha on Vinayaka Chaviti with 21 leaves is a tradition built over centuries. 21 Mantras are chanted, while specified medicinal herbs are offered to the God.
Traditionally children along with elders go to fields a day before and collect the specified herbs, during which time the elders pass on the names, identification marks, use in home remedies and their conservation. Collection and keeping in home for 9 or 7 or 5 or 3 days the patri protects the home and family from common ailments and when the ganesh murthi made of mud and the patri is immersed in the village pond, they purify the water. This tradition got weakened, thus the custom of offering leaves remained while the purpose is lost.

@TheRipper108 : I have no idea about the Katyayani. But this murti is purely made out of clay available in michaels store. This is an eco-friendly clay. Once we are done with the pooja, you can soak in water overnight and squeeze the clay and pour it into any plant area or leave it at a free flowing creek where there clay will get washed off. I am going to give you the reason behind clay Ganesh making in my next comment.
