Fly in this home cockpit who's built by my friend : between Roma-Fiumiccino (LIRF) and Nice-Côte d'Azur (LFMN).
This small video show many components of this home cockpit in action with two french virtual pilots on IVAO Network, the great flight simulation network.
On the left side: Gérard Pottier who proceeds a take off from runway 25 at LIRF.
On the right side: Patrick Férant who proceeds a difficult landing with a 21kt crosswind and some windshear...
Please, no smoking and fasten sealt belts!

This setup begs for a projector. That LCD is too small, correct?

This LCD is not very small when you are sitting in the cockpit. It's a good solution in a first time. I think as you for a second time: a big screen provided by a projector will be more adapted.
